This post's title might be 'How to make the Twitter icon black again', but what we're about to show you works to change the icon of any application. (Caveats: it's an innocuous little trick, and is very unlikely to break anything, but proceed at your own risk. Also, updates to the app will almost certainly revert your changes.)
The basic technique is to open up the application, and replace the .icns file that matches the app icon with another from the web or elsewhere on your Mac. If you've applied the 2.0.2 update to the Twitter app, the original black icon is actually hidden away inside the app; if you're still on 2.0.1, you'll need to do step one, then activate Time Machine ? or manually dig through your backups if you use another system ? to step back through to find the earlier app that had the original icon and restore it to your current system. We're going to assume you're all up to date though.
01 Locate the app, Show Package Contents
Quit Twitter. Find the app in your Applications folder, then right-click on it and choose Show Package Contents. Open the Contents folder, then the Resources folder inside that. There you'll find Icon.icns ? the current, 3D blue one ? plus a couple of alternatives.

02 Copy out icons, rename
Drag all three to your Desktop to create copies. Rename them so that the icon you want is called Icon.icns ? note the capital I. (Note too, if you're applying this technique to a different app, that the icon file may sometimes have a different name; just make sure your new icon matches what's in the app package.)

03 Overwrite new icons
Drag all three icons back from your Desktop to the /Contents/Resources folder; you'll be prompted to enter your admin password. Enter it, then choose the Replace option for all the files. Relaunch the app, and you're done! (If it was already in your Dock, you may need to drag it out then in again.)
Bonus icon!
If you have the original install of the Twitter app in a Time Machine or other backup, there's actually an alternative black icon in that package which you may prefer.
